Sweet Potato

Sweet Potato or Ratala (रताळ) is a tuber that's commonly consumed during fasts. The reason the tuber is popular during fasts is that it is easy to digest. Usually, mum makes kees by substituting potatoes with sweet potatoes in Batatyacha Kees. Later, we use the potato starch to make a simple but delicious kheer
Another popular fasting recipe uses fried discs of Ratala, dipped in sugar syrup.

I've heard about the purple coloured sweet potatoes but unfortunately haven't been able to lay my hands on any of them. I think purple coloured kees will look pretty cool !
Nutritionally speaking, sweet potatoes are rich in beta-carotene and meet a large part of the daily Vitamin A requirements. They are also rich in complex carbohydrates and dietary fibre. 
I guess sweet potatoes, like Sugarcane Juice are one of the few sweet things that are actually good for health!
